Author: Laura Marzen, RD

  • 2 small rips peaches, halved, pitted and coarsely chopped
  • 2/3 cup cubed mango (fresh or frozen)
  • 2 (5.3-ounce) cartons plain non-dairy yogurt alternative*

  • Place all ingredients in a blender. Cover; blend until very smooth, scraping sides of blender as needed. Pour mixture into 6 (3 ½ to 4-ouncpopsicle molds. Add popsicle sticks if needed. Cover tops of molds. Freeze popsicles for at least 4 hours or until popsicles are completely frozen.
  • To serve, remove popsicles from molds (if needed, run warm water briefly over the outsides of the molds to loosen the popsicles).

* I used So Delicious brand coconut milk yogurt, which has two plain versions. One is called “unsweetened” and doesn’t have added sugar. The other plain version is just called “plain” and has a little bit of added sugar. Either of these options will work in these smoothie popsicles. If you use the “unsweetened” version, taste the blended mixture before pouring it into the popsicle molds. If needed, you can stir in 1 to 2 teaspoons of honey to sweeten the mixture slightly.
