Welcome to Fresh Food Bites!
My name is Laura and I’m a dietitian, recipe developer, food enthusiast, and creator of Fresh Food Bites – a blog dedicated to providing healthy recipes and sound nutrition information. I’m also a wife and mom of two busy kids, so I know how challenging it can be to not only get food on the table when everyone is super hungry, but also how difficult it can be to get the kids (and husband sometimes!) to eat the well-balanced, healthy food I cook!
Over the course of the last couple of years I have made some shifts in my own eating, and I feel better than ever! The most major shift I made was eliminating dairy completely – it just doesn’t work for my body, and while I have known that for years, I hadn’t been taking my lactose intolerance seriously. Now I am, and I’m never looking back! I also avoid gluten – because there is so much crossover between lactose intolerance and gluten intolerance, I decided to give it a try, and again, because I feel better not eating gluten, I avoid it as best as I can.
Before having kids, I worked in the test kitchen for Meredith Publishing, which produces Better Homes and Gardens magazine, Midwest Living magazine, Diabetic Living magazine, and a slew of other magazines and their respective websites. It was in the test kitchen that I honed my cooking and recipe development skills. I can’t think of a better “job”, although it never really seemed like a job to work there. I got to cook, eat, play with food, and experiment with new recipes all day for 7+ years. Almost every day of working there, I would cook 3 to 5 recipes or work on creating new recipes for the publications and websites. Needless to say, I learned A LOT about cooking and writing good recipes.

What you choose to eat is SO important and will have lasting effects on your life and
health. I’ve seen the negative health impacts of making poor food choices
through my work as a dietitian; the consequences are real, and even if they
don’t show up today or tomorrow, they can be difficult to turn around when
they do show up.
The good news is that making healthy food choices also impacts your health (for the better!), not only today, but for a lifetime.
Even for a dietitian like me, making good food choices means thinking through what I eat every day and making tweaks as I learn more about food and nutrition. I’m not immune to cravings, or to the stresses of having to get dinner on the table quickly, and we occasionally need to do dinner or lunch on-the-run, which means I know how tempting it can be to say yes to a second helping of dessert, grab carry out, or rely on unhealthy snacks on the fly.
Are you like many people, who are 75% sure of what it means to choose healthy foods, but fall into the trap of grabbing unhealthy foods due to lack of time or not having the confidence to cook healthy foods in a tasteful way?
It takes more than knowing WHAT foods you should be eating.
You have to consciously BUY those foods when you are grocery shopping, COOK those foods when you’re getting meals ready, and EAT those foods when hunger strikes. It does no good to simply know what foods you should eat.
